Easy to make snack/meal that has all the vegetables...a healthy blend for all ages... Well, never been wrong with this one till date... People love it and feel full...contains as much nutrition as color :)

Ingredients For bread upma

1 pkgbread, white (cut into small squares)

1potato, chopped

1red onion, chopped
-
1yellow bell pepper, chopped

1tomato on the vine, chopped

1/2 cgreen peas, boiled

2 Tbspolive oil
-
2 Tbspbutter, melted, unsalted

1-2 tspchilli powder (depending on the amount of heat you can handle)

1 Tbspcurry powder
-
salt to taste

2 Tbsplemon juice concentrate

1/4bunch cilantro leaves, finely chopped (optional)
How To Make bread upma

1Preheat the oven on Broil setting. In a large casserole dish, combine the bread pieces, little salt, 1 tbsp butter, 1/2 teaspoon chilli powder and 1 tablespoon olive oil. Mix nicely so as to make sure each piece has been coated well. Broil for 6 min or till the bread becomes golden brown in color, depending on the oven and remove the dish and set aside.

2Meanwhile, to a sauce pan add 1 tbsp butter, remaining olive oil and saute the onion slices till they turn translucent for about 8 min.

3Now stir in 1 tsp chilli powder, curry powder, salt and tomatoes and stir it again with the onion slices. fry for about 5 min.

4Boil the potato and bell pepper pieces in the microwave for about 4-5 min and add it to the saucepan.

5Once all the vegetables have cooked together for about 5 min, add the lemon juice and cilantro. Finally stir in the bread crumbs. Serve immediately and hot with Tomato Ketchup!
