INGREDIENTS

For Jicama Apple Slaw:

3 cups shredded jicama (1 small jicama or 1/2 a large one)
•
1/2 green apple, chopped (for less sweet slaw, sub with celery)
•
1 small onion, diced
•
1/4 cup flat leaf parsley, finely chopped
•
salt + pepper to taste
•
Ideas for optional add-in's:
•
* 2 Tbsp chopped walnuts
•
* 1 Tbsp hemp seeds
•
* 2 Tbsp chopped pistachios
•
* 1 Tbsp raisins
•
* 2 Tbsp sunflower seeds
•
For Slaw Dressing - Creamy Maple Mustard:
•
1 1/2 Tbsp vegenaise (vegan mayo)
•
3 tsp Dijon mustard
•
2 tsp maple syrup
•
2 Tbsp seasoned rice vinegar (or sub lemon juice or apple cider vinegar)
•
