INGREDIENTS

1/4 cup extra virgin olive oil
Kosher salt
1 small onion, cut into chunks
1 small carrot, cut into chunks
1 small stalk celery, cut into chunks
3 cloves garlic, crushed and peeled
2 tablespoons extra-virgin olive oil, plus more for drizzling
3 thick slices bacon (about 4 ounces), cut into 1/2-inch pieces
1/4 teaspoon crushed peperoncino flakes, or to taste
One 28-ounce can whole Italian plum tomatoes, preferably San Marzano, crushed by hand
1/4 cup chopped fresh Italian parsley
1/2 cup freshly grated Grana Padano, plus more for serving
1/2 cup freshly grated Pecorino Romano, plus more for serving
