INGREDIENTS
Chicken:
6-8 skin-on chicken legs, thighs or both
2 T butter
1/2 tsp. garlic powder
1 tsp. dried rosemary
1/4 tsp. salt
1/4 tsp. pepper
Pilaf:
1 head cauliflower, steamed and riced (or one bag frozen cauliflower florets)
1/4 cup shredded carrots
1 cup shredded green cabbage
10-30 stalks of raw asparagus (depending on the thickness of the stalks), sliced
1/2 red bell pepper, diced
1/4 cup diced onion
1/4 C grated parmesan cheese
2 T butter
1/2 C chicken stock
3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
2 tsp. fresh lemon zest (about one lemon)
4 T lemon juice
1/2 tsp. dried rosemary
1/2 tsp. dried thyme
1 tsp. dried parsley
Cream Sauce:
1/4 C heavy cream
1/4 C chicken stock
1 tsp. dried thyme
1/4 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. xanthan gum
1/4 C shredded parmesan cheese (for garnish, if desired)
