INGREDIENTS

For the crust:

1 3/4 C all purpose flour

1/4 C + 1 tbsp granulated sugar

1/4 tsp salt
•
125 gr unsalted butter, cold and cut into cubes

2 egg yolks
•
1/2 tsp vanilla extract
•
For the filling:
•
1 1/2 C whole milk
•
3/4 C granulated sugar
•
4 egg yolks
•
1/3 C + 1 tsp corn starch
•
1/2 C lemon juice
•
1 tbsp lemon zest
•
1/4 tsp salt
•
70 gr unsalted butter
•
For the meringue:
•
1/2 C granulated sugar
•
1/4 C water
•
2 egg whites, at room temperature
•
A pinch of cream of tartar
•
The juice of half a lemon
