1/4 cup cornstarch
1/4 teaspoon salt
1 1/2 cups water, boiling
3 eggs, separated
2 teaspoons lemon rind, finely grated
1/3 cup lemon juice, freshly squeezed (from 2-3 lemons)
2 tablespoons butter or margarine
Baked 9-inch pie crust (or 6 tartlet crusts)
1/8 teaspoon salt
1/8 teaspoon cream of tartar
