Makes 1 9-10" round angel food cake

Ingredients:

1 1/2 cups egg whites (about 10-12 eggs)
•
1 1/2 teaspoons pure lemon extract
•
1 1/2 teaspoons cream of tartar
•
1/2 teaspoon pure vanilla extract
•
1/2 teaspoon salt
•
1/2 teaspoon fresh lemon zest
•
1 1/2 cups sugar
•
1 cup cake flour
•
For Lemon Glaze (optional):
•
1/2 cup confectioners sugar
•
1-2 tablespoons fresh lemon juice (use lemon that was used for zest. Be sure to zest first before juicing)
•
1/2 teaspoon lemon zest
