Lasagna Soup

INGREDIENTS
1 ½ t. olive oil (I didn't use any oil because I found the sausage had enough fat)
1 lb. bulk Italian sausage or ground beef
1 ½ onions, finely chopped
3 t. garlic, minced
1 ½ t. oregano
1/2 t. pepper
Pinch of salt
¼ t. red pepper flakes
1 small can tomato paste
3 cans diced tomatoes
2-3 cans chicken broth (depending how thick you like it--I use water and chicken base/bouilon from Costco, it is MUCH cheaper than broth)
2 bay leaves
12 oz. corkscrew or shell pasta
3 t. basil
6 oz. ricotta cheese (or cottage cheese blended until smooth)
6 T. parmesan cheese
1 ½ c. shredded mozzarella cheese
