¼ cup soy sauce
2 tsps. unseasoned rice
vinegar
1 tsp. toasted sesame oil
FOR THE DUMPLINGS:
1 pound ground pork
2 garlic cloves, minced
¼ cup shredded carrot (about 1 small)
2 scallions, finely chopped (white and green parts)
½ tsp. toasted sesame oil
1 tsp. hot sauce (Anderson likes Frank’s Red Hot)
1 egg, beaten
1 tsp. crushed red pepper flakes
1 tsp. kosher salt
Freshly ground black pepper
40 round dumpling (potsticker/gyoza) wrappers
Vegetable or peanut oil
