INGREDIENTS

2 cups of cooked chicken, diced (I used a rotisserie chicken from Costco. It only took about half of the chicken.)

1 onion, diced
•
1 green bell pepper, diced
•
2 tablespoons vegetable oil
•
1 (10 3/4-ounce) can cream of chicken soup, undiluted (I used the lower salt/lower fat version)
•
1 (10 3/4-ounce) can cream of mushroom soup, undiluted (I used the lower salt/lower fat version)
•
1 (14.5-ounce) can petite-diced tomatoes, undrained
•
1 (4-ounce) can green chiles, undrained
•
1 teaspoon chipotle chili powder
•
1/2 teaspoon granulated garlic
•
1/2 teaspoon cumin
•
12 (6-inch) corn tortillas
•
2 cups grated sharp cheddar cheese
