1 red bell pepper - 1/4" dice

2 poblano peppers - 1/4" dice
•
1/2 red onion - 1/4" dice

1 teaspoon cumin

2 large cloves garlic - pressed or minced
•
1 cup milk
•
1/2 cup flour

1 cup sour cream

3 cups grated jack and cheddar cheese

12 corn tortillas

2 - 14.5 ounces cans diced tomatoes with chilis
