Dashi Stock 75 ml
Egg Yolks x2
vinegar mix:
Rice Vinegar 2 tbsp
Lemon Juice 2 tbsp (or Yuzu juice)
Sea Salt 1 tsp
Mustard 1/2 tsp (Japanese mustard preferred)
Sugar 1 tbsp
