1 tablespoon rice vinegar

4 medium cloves of garlic, peeled and smashed

1 (1-inch) piece of ginger, sliced

1/2 tablespoon whole black peppercorns
•
1 1/2 pounds ground chicken or turkey (dark meat recommended)
•
1/2 cup panko bread crumbs
•
2 teaspoons cornstarch
•
2 medium scallions, white and green parts, finely chopped
•
1 large egg, lightly beaten
•
2 teaspoons finely grated fresh ginger
•
1 tablespoon finely minced fresh garlic (about 2 large cloves)

2 teaspoons toasted sesame oil
•
1 teaspoon kosher salt

1/2 teaspoon ground pepper
