INGREDIENTS
3 whole eggs
2 ¼ cups granulated sugar
2 cups shredded skin-on zucchini
1 ½ teaspoons vanilla extract
1 cup oil (see note)
3 cups flour
½ teaspoon baking powder
4 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts
Solid shortening to grease loaf pans
Flour to coat loaf pans
