Irish Pub Burgers

INGREDIENTS
2 Tablespoons mayonnaise (homemade or store-bought)
1/2 Tablespoon Irish whiskey (I used Jameson - substitute lemon juice if desired)
1 small clove garlic (pressed or finely minced)
sea salt and pepper (to taste)
1/8 teaspoon paprika (or add more to taste)
1 Tablespoon olive oil
1 small sweet, yellow onion (thinly sliced)
1 pound ground beef (I used 85% grass-fed)
sea salt and pepper (to taste)
2 ounces cheddar cheese (grated or sliced)
2 slices thick-cut bacon (cooked and cut in half, or folded in half)
2 hamburger buns
