This dish, based on a recipe in James Oseland's cookbook, Cradle of Flavor (W. W. Norton, 2006), is also great when you bake it as one whole square, without the layers (just eliminate the extra three tablespoons of butter).

1 1⁄2 cups plus 3 tbsp. butter, softened
•
2 cups plus 1 tbsp. cake flour (not self-rising),
•
sifted
•
1 tbsp. ground cinnamon
•
1 tsp freshly grated nutmeg
•
1⁄2 tsp. baking powder
•
1⁄2 tsp. ground cloves
•
Pinch of salt
•
1 2⁄3 cups sugar
•
4 large eggs
•
3 large egg yolks, lightly beaten
•
2 tsp. vanilla extract
