Indian Spiced Chickpea Flatbread {Socca} - Cookin Canuck

"This socca recipe produces a wonderful chickpea flatbread that happens to be vegan and gluten free.  Great for eating on its own or dipping into curries...."

INGREDIENTS
1 cup chickpea or garbanzo bean flour
1 cup water
3 tablespoons + 2 teaspoons extra virgin olive oil (divided)
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/8 - 1/4 teaspoon cayenne pepper
1/2 medium yellow onion (chopped)
1/3 cup diced tomato
1 garlic clove (minced)
2 tablespoon minced cilantro
