1 tablespoon Shaoxing wine
1/4 teaspoon salt
2 teaspoons cornstarch
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine
1 tablespoon soy sauce
1 teaspoon dark soy sauce
2 teaspoons sugar
1/2 teaspoon cornstarch
2 tablespoon peanut oil ((or vegetable oil))
6 scallions (, sliced into 1” (2.5) pieces, white and green parts separated)
5 garlic cloves (, smashed and sliced)
1/2 ” ginger (, julienned)
2 tablespoons fermented black beans
2 stalks celery (, sliced on bias into 1/2” thick pieces)
