Hummingbird Cake

Vegetable oil spray or shortening for greasing the pans

Flour for dusting the pans

1 package (21.6 ounces) Cake Mix Doctor’s Old-Fashioned Yellow Mix

1 can (8 ounces) crushed pineapple packed in juice, undrained
•
1 cup mashed bananas (from 2 to 3 very ripe bananas)
•
1/2 cup water
•
1/2 cup vegetable oil
•
3 large eggs
•
1 teaspoon pure vanilla extract
•
1 teaspoon ground cinnamon
•
Cream Cheese Frosting:
•
1 package (8 ounces) cream cheese, at room temperature
•
1 stick (8 tablespoons) butter, at room temperature
•
4 cups confectioners sugar, sifted
•
1 teaspoon pure vanilla extract
•
1/8 teaspoon ground cinnamon, if desired
