Ingredients: 3 cups all purpose flour; 2 tsp. baking powder; 1/2 tsp. baking soda; 1 tsp. salt; 1 cup oil (vegetable or canola); 2 cups sugar; 4 eggs, lightly beaten; 2 tsp. cinnamon; 2 tsp. vanilla; 8 oz. crushed pineapple (drained); 2 cups very ripe bananas, mashed; 2 cups chopped pecans, divided (can use walnuts); Cream Cheese Frosting; 2 (8 oz.) blocks of cream cheese (softened); 1 stick of butter, softened (1/2 cup); 2 lbs. confectioners sugar; 2 tsp. vanilla
