How to make our double cheese potato gratin

"Gooey, cheesy and oh-so good...."

INGREDIENTS
300 ml pouring cream
1 cup (250ml) milk
50 butter
¼ teaspoon ground nutmeg
2 cloves garlic, bruised
3 sprigs fresh thyme
1.5 kg potatoes (see tips)
1 cup (120g) coarsely grated smoked cheddar (see tips)
½ cup (40g) coarsely grated parmesan
sprigs fresh thyme, extra, to serve
