Fresh lemon juice, lime juice, red wine or sherry vinegar (*see note below)

1-2 anchovy fillets
•
1/2-1 small shallot, chopped

1/2-1 seeded jalapeño pepper

1/4-1/2 teaspoon red pepper flakes or Aleppo style pepper

1-2 teaspoons honey
