INGREDIENTS

4 pound whole chicken
•
4 springs of fresh thyme (reserve 1 sprig of leaves for chicken seasoning)
•
3-4 cloves of fresh garlic, smashed
•
1/2 of a large red onion, sliced (reserve a 2 TB of chopped onion for chicken seasoning)
•
about 5-6 whole carrots, peeled
•
2 sticks of celery , chopped
•
salt and pepper to preference
•
1-2 cups of water
•
1 Tablespoon of olive oil
