1/2 cup (71g) hot chocolate mix or 3/4 cup (84g) King Arthur Sweet Ground Chocolate
1/3 cup (71g) light brown sugar packed
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon espresso powder optional; for enhanced flavor
1 large egg
1 teaspoon King Arthur Pure Vanilla Extract
1 1/4 cups (150g) King Arthur Unbleached All-Purpose Flour
1 1/2 cups (255g) mini chocolate chips
1/2 cup (60g) cocoa nibs optional
5 1/2 dozen (213g) bittersweet chocolate wafers or other high-quality chocolate wafer
peppermint crunch cocoa nibs or chopped nuts for garnish
