Honey Bourbon Salmon with Cracked Black Pepper and Local Potatoes with Provence Herbs

INGREDIENTS
4 6 - ounces salmon filets, or steaks about 1 inch thick
1/2 cup packed brown sugar
3/4 cup bourbon
2 teaspoons soy sauce
3 tablespoons honey
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
2 1/2 lbs potatoes. Local red and blue are my favorite.
1 large vidalia onions, sliced thick
1 cup mushrooms, sliced thick. Portobello or button.
1 tbsp dried thyme and a strand or 2 for presentation.
5 tpsp extra virgin olive oil.
1 tbsp sea salt
1/2 tsp black pepper, freshly cracked
