Homemade Cajun Andouille Sausage; Louisiana Style - Jett's Kitchen

INGREDIENTS
5 pounds fatty pork shoulder (or use 3 1/2 pounds pork and 1 1/5 pound pork belly.)
1 teaspoon Instacure (curing salt for curing meats)
1 large yellow onion (diced)
1 Tablespoon olive oil
1/3 cup dry instant milk
6 cloves garlic (chopped)
1/2 teaspoon ground cloves
1/4 teaspoon allspice
1 teaspoon dry mustard
1/3 cup Cajun seasoning
1/4 cup beer (optional)
1 bag Hog casings ((I used 3 casings))
