INGREDIENTS
3 tablespoons extra-virgin olive oil, divided
1/2 cup diced shallot
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons chopped parsley
1 or 2 cups vegetable broth (check couscous box for amount)
1 pound medium (31/35) shrimp, shelled and deveined
1 cup instant couscous
1/4 cup chopped fresh basil, packed
Salt and freshly ground pepper, to taste
