2 large red onions, chopped

•1 slab ribs (3 lbs. or so) washed and cut apart (all varieties of ribs taste great in this recipe)

•3 TB. qibe (spiced butter, see recipe below) or regular butter

•1/4 Cup fresh ginger, finely diced (or 1 TB. POWDERED GINGER)

•2 cloves fresh garlic (this recipe LOVES garlic!), finely diced (or 1/2 tsp. PENZEYS MINCED GARLIC)

•1 jalapeño or other hot, green, fresh pepper (optional), minced
•
•1/4-1 tsp. salt, to taste
•
•1/4-1 tsp. PENZEYS FRESHLY GROUND PEPPER, to taste

•11/2-21/2 Cups water (or more if you'd like a more traditionally brothy dish)
