INGREDIENTS

2 lbs sirloin steak finely cubed

1/2 cup Marsala wine
•
1/4 cup flour
•
1.5 Tbsp Old Bay seasoning
•
1 Tbsp black pepper
•
2 Tbsp EEOV
•
2 Tbsp garlic powder
•
Meat prep: combine flour, Old Bay, pepper, garlic powder. Dredge cubes of meat in mixture. Brown meat in EEOV and marsala, scraping bottom of pan often to remove residue. Add pepper to taste, remember that pepper intensifies with time!

Then add soup stock items:
•
1 cup burgundy or hearty wine
•
14 oz. beef broth or beef stock
•
3 small finely chopped onions
•
1 stalk of finely chopped celery (or 4 Tbsp of chopped celery leaves)
•
1/2 bag of finely chopped baby carrots
•
1 can tomato puree
•
1 tsp green capers
•
1.5 Tbsp minced garlic
•
4 oz can tomato paste
•
8 oz can drained peas
•
8 oz can drained green beans
•
8 oz can drained yellow corn
•
salt to taste
•
pepper to taste
