2 whole Carrots, Chopped
1-½ pound Chuck Roast, Cubed
1 can (14 1/2 Oz. Size) Diced Tomatoes, Do Not Drain
2 quarts Low Sodium Beef Broth/Stock
2 cups Vegetable Stock
1 pinch Sea Salt, to taste
⅛ teaspoons Pepper To Taste
1 sprig Fresh Thyme, Chopped
2 leaves Bay Leaves
5 whole Baking Potatoes, Peeled And Cubed
½ cups Barley, Quick Cooking (Quaker Is A Good One)
