INGREDIENTS
5 1/2 lbs. pork shoulder (boneless, excess fat trimmed)
3 cloves garlic – finely chopped
3 TBSP salt
2 tsp. pepper
1 1/2 tsp. marjoram
1/2 cup water
natural casing (most butchers will be able to supply you with this)
