INGREDIENTS

2 lbs. ground beef

1 medium onion, chopped
•
1 garlic glove, minced
•
2 c. tomato juice
•
2-3 carrots, sliced
•
2-3 ribs celery, sliced
•
half a green pepper, chopped
•
1 c. corn
•
2 c. green beans
•
2 medium potatoes, cubed (or substitute with one cup of barley)
•
2 c. water
•
1 T. worcestershire sauce (I used Lea & Perrins original)
•
1/4 tsp. dried oregano
•
1/4 tsp. dried basil
•
1/4 tsp. dried thyme
•
dash of hot pepper sauce
•
2 T. dry onion soup mix, or 1 beef bouillon cube
•
1 tsp. salt
•
1/4 tsp. pepper
•
Variation: Use 1 c. barley in place of potatoes.
