Ground Beef Lo Mein

"This easy lo mein recipe has affordable and juicy ground beef, plenty of tender-crisp vegetables, and an addictive savory and sweet sauce! You don't need a wok for this takeout favorite...."

INGREDIENTS
8 ounces lo mein noodles (see note)
1 pound lean ground beef
1 tablespoon olive oil
1/2 medium onion (cut into fairly thin strips )
1 medium red bell pepper (sliced into thin strips)
5 ounces mushrooms (I use cremini) (sliced)
1 cup snow peas or sugar snap peas
Salt & pepper (to taste)
Optional, for serving: chopped scallions
3/4 cup beef broth or water
1/4 cup hoisin sauce
2 tablespoons low sodium soy sauce
1 tablespoon sriracha sauce
1 teaspoon apple cider vinegar or rice vinegar
2 tablespoons brown sugar
1 tablespoon cornstarch
1 teaspoon fresh ginger (grated)
2 cloves garlic (minced)
