1 kg minced mixture beef, pork and veal or chicken
1 medium brown onion, finely chopped
½ cup Arborio rice
5 tablespoons finely chopped fresh parsley
4 tablespoons finely chopped dill or mint
4 tablespoons olive oil
Salt and pepper
Plain flour, to coat
8 cups beef stock or water
60 g butter
2 eggs
½ cup freshly squeezed lemon juice
