1 2 1/4 cups King Arthur white whole wheat flour, or 2 cups King Arthur Unbleached All-Purpose Flour
1 1/4 cup granulated sugar
1 1 teaspoon baking soda
1 1/2 teaspoon salt
1 1 1/2 teaspoons ground ginger
1 1 teaspoon cinnamon
1 1/4 teaspoon each cloves and nutmeg
1 1/2 cup (1 stick) unsalted butter, melted
1 3/4 cup molasses
1 1/4 cup water
1 1 large egg
1 1 cup buttermilk
1 1/2 cup diced crystallized ginger (optional)
