INGREDIENTS
Filling
3 lbs ripe peaches or nectarine, about 9 medium ones (I used a mix)
2 pints (1lb) of strawberries, washed, hulled and cut into quarters
1/4 cup chopped crystallized ginger
1/4 cup brown sugar
2 tsp cornstarch
1 Tbsp juice from lemon
8oz of cream cheese
1 cups white sugar
2 tsp vanilla extract
1/4 tsp of almond extract
1 tsp of cinnamon
4 large egg yolks
1/2 cup heavy cream
Biscuit Topping
2 cup unbleached AP flour
1/4 cup plus 2 Tbsp white sugar
1 1/2 teaspoon baking powder
1/2 tsp baking soda
1/2 tsp salt
10 Tbsp cold unsalted butter
2/3 cup plain yogurt (whole milk preferred)
more white sugar to sprinkle on top of cobbler
