INGREDIENTS
Cookie Cups
3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
3/4 cup light brown sugar (or dark brown)
1/4 cup sugar
1 large egg, at room temperature preferred
2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/4 cup semi-sweet chocolate chips
Funfetti Cheesecake Layer
16 ounces cream cheese (two 8 oz packages), softened to room temperature
1/2 cup sugar
1 large egg
3/4 teaspoon vanilla extract
1/2 heaping cup sprinkles (not the little ball sprinkles, aka nonpareils; those will bleed their color)
