INGREDIENTS
2 3/4 cups/660ml water
1 1/2 cups/360ml uncooked long grain white rice, rinsed, drained
1/4 teaspoon/1.25g salt
4 tablespoons/60ml canola oil, divided
2 large eggs, beaten to blend
4 small carrots (about 4 ounces total), peeled and finely diced
Salt and freshly ground black pepper
3/4 cup/180ml thinly sliced green onions
1/3 cup/80ml reduced-sodium soy sauce
1 teaspoon/5ml toasted sesame oil
