4 pieces of aluminum foil, large enough to wrap around each sandwich

1 french baguette, cut into 4 even pieces, then cut in open (length wise)

1 pound roast beef, sliced thin
•
3 tablespoon unsalted nutter
•
2 large onions, peeled and thinly sliced
•
1/4 teaspoon crushed red pepper
•
1/2 teaspoon salt, plus more to taste
•
1/4 teaspoon black pepper, plus more to taste
•
1/2 cup cooking sherry
•
2 cups beef stock
•
8 ounces gruyere cheese, grated (swiss is a great affordable substitute here if need be)
