Festive Brunch Pie | Egg Recipes

INGREDIENTS
1 10 oz (300 g) package frozen chopped spinach, thawed
3 eggs, lightly beaten
1 1/2 cups (375 mL) ricotta cheese
1 cup (250 mL) shredded fontina or mozzarella cheese
1/2 cup (125 mL) freshly grated parmesan cheese
1/4 cup (50 mL) onion, finely chopped
1/4 cup (50 mL) fresh parsley, finely chopped
to taste salt, pepper, and ground nutmeg
pastry for a double crust pie
6 oz (175 g) sliced cooked ham (or turkey or Italian salami)
6 hard cooked eggs, sliced and peeled
