Espinacs amb Pinyons i Panses Catalan Style Spinach with Pine Nuts & Raisins

INGREDIENTS
1 lb fresh spinach
2 Tbs. pine nuts
2 Tbs. muscatel raisins (very Catalan) or sultanas, soaked in warm water to plump them (avoid dark California raisins)
1/4 tsp. cinnamon or 1/2 tsp. powdered ginger or 1/8 tsp nutmeg – use, one, two or all three as you wish
2-3 Tbs. white wine vinegar (you can also try a mellower balsamic reduction)
several grindings of black pepper
salt to taste
3 Tbs. extra virgin olive oil
