For the tomato sauce:
1 tablespoon olive oil
2 cloves garlic, diced
1 (28 ounce) can tomato sauce
1 (28 ounce) can whole tomatoes
Salt and pepper, to taste
1 tablespoon dried basil
1 tablespoon dried oregano
1/4 teaspoon crushed red pepper flakes
To complete the Eggplant Parmesan:
2 large Italian eggplants
Salt, for preparing the eggplant
1 cup flour
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
3 eggs
2 cups freshly made breadcrumbs
A little vegetable oil, for drizzling
1/2 cup grated Parmesan
1 (1 pound) ball fresh mozzarella, diced
Fresh basil, chopped, to taste
