For Marinade:

3 tablespoons cilantro, chopped

1 jalapeno, sliced
•
1 tablespoon honey
•
1 tablespoon cumin
•
1 tablespoon salt
•
1 teaspoon pepper
•
1/4 cup canola oil
•
Juice of 2 limes
•
For Salad:
•
1 cup fresh or frozen corn, thawed
•
1 can of black beans, rinsed and drained
•
1 large tomato, diced
•
1 red onion, thinly sliced
•
2 hearts romaine lettuce, chopped

For Spicy Crema:

1 cup sour cream
•
1/4 cup Mexican hot sauce, such as Cholula

Juice of 1 lime
