Easy One Pot Chicken Burrito Bowls

INGREDIENTS
1 pound chicken breasts (cubed into 1 inch pieces)
1/2 cup diced onion
1 Tablespoon olive oil
1 15 oz can black beans (rinsed and drained)
1 15 oz can corn (drained)
1 14.5 oz can diced tomatoes
1 4 oz can diced green chiles
1/4 cup Chunky Salsa
1 cup jasmine or Basmati rice (I used Basmati)
2 Tablespoons taco seasoning
1 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups chicken stock or water
1 cup shredded cheddar/jack cheese
Optional toppings:
Tomatoes
Avocado
Sour cream
Cilantro
