INGREDIENTS
1 tbsp olive oil
2 cloves garlic, crushed
1 red onion, finely chopped
500g/17.5 oz mushrooms, chopped
500ml/1 pint/ 2 cups vegetable stock (2 cubes)
1 tbsp flour
2 tsp dried parsley
1 tsp dried thyme
salt and pepper
cream (dairy or dairy-free) to serve (optional)
