Easy Gluten Free Chicken and Dumplings

2 Tbsp olive oil
1/2 large onion, diced
2 ribs celery, sliced
4 cups chicken broth
1 cup water
1 lb boneless skinless chicken breasts, each breast cut into 2-3 pieces
1 1/2 cup frozen peas and carrots (or other preferred vegetables)
1/2 tsp black pepper
1/2 tsp salt (or to taste)
1/2 tsp ground thyme
2 cups homemade gluten-free cream of chicken soup
For the Dumplings:
2 1/4 cup Gluten-Free Bisquick mix
1/3 cup shortening
2/3 cup milk
3 eggs
