Easy Flavorful Chicken Recipe With Wine and Cranberries

1 to 1 1/2 pounds boneless skinless chicken, thigh meat preferred
1/4 cup minced onion
1 cup dry red wine
1 cup fresh or frozen cranberries
2 tablespoons grated fresh ginger
1 bay leaf
1/2 tablespoon Chinese Five Spice Powder (if you don't have it, use 1/2 t cinnamon and 1/2 t allspice)
Sweetener to taste
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
