"My family loves these easy green chile chicken enchiladas. I love them too, because with only five ingredients, this recipe is completely doable after work. I use chicken thighs for their rich chicken flavor and braise them in store-bought green sauce. This does two things: it imparts flavor to the chicken filling, and also gives the enchilada sauce a boost of homemade flavor. Fire-roasted canned green chilies add some depth and pepper-jack brings it home with a cheesy spicy bang. Not quite homemade, but tastes like it!..."

INGREDIENTS
2 tablespoons olive oil
1 1/4 pounds boneless skinless chicken thighs
One 7-ounce can mild fire roasted green chilies, drained and chopped
2 cups shredded pepper jack cheese
One 28-ounce can green enchilada sauce
Eight 8-inch flour tortilla (sometimes marked as soft taco size)
Kosher salt and freshly ground black pepper
