Dry Brined Spatchcock Turkey

INGREDIENTS
2 1/2 tablespoons kosher salt*
1 tablespoon brown sugar
1 teaspoon ground white pepper
2 teaspoons rubbed sage
2 teaspoons ground marjoram
1 teaspoon garlic powder
1 teaspoon ground ginger
12-14 lb fresh or heritage turkey (spatchcocked (see above))
Dry Brine (recipe above)
4 oz 1 stick salted butter, at room temperature
1 onion (chopped)
3 large carrots (chopped)
4 celery ribs (chopped)
2 fresh bay leaves
1 bunch fresh sage
1 bunch fresh thyme
2 sprigs of fresh rosemary
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
Turkey Drippings
3 cups turkey stock (see above for instructions, warmed)
Kosher Salt
Freshly ground black pepper
