I got this recipe from a friend who is lactose intolerant. I found it to be delicious and so easy to make that I prefer it to a regular pineapple smoothie. I hope you like it, too. Picture is free clip art.

Ingredients For pineapple smoothie (lactose free)

1 csilk's plain soymilk or similar lactose free milk substitute

1 can(8 ounces) unsweetened crushed pineapple

1/2 cpineapple juice
-
3 Tbsphoney, sugar or equivalent sugar substitute

1/2 tspvanilla extract
-
1/4 ccoconut
-
6ice cubes
How To Make pineapple smoothie (lactose free)

1Place all ingredients except ice cubes in a blender and process until smooth. Coconut should be chopped very fine. Add ice cubes a couple at a time and continue to process until ice is crushed and incorporated into the drink completely. Pour into chilled glasses and serve immediately.
